This special earthenware pot has a cone-shaped lid. It is not just cookware; it feels like magic. Our ancestors, the Berbers, created it a long time ago. They designed it to keep all the flavour. This turns simple ingredients into something amazing.
When we refer to a tajine, we mean many different dishes. Each region adds its special touch to this food. In Fez, tender lamb is cooked with prunes and caramelized onions. The sweet and savory flavors mix beautifully. In Marrakech, chicken is cooked with saffron and preserved lemons. It shines bright like the sun. In the Atlas Mountains, vegetables are slow-cooked with tasty Ras el Hanout. These dishes tell the stories of this magical land.

Moroccan Chicken Tajine Recipe:
Ingredients:
- One whole chicken, cut into pieces.
- 2 onions, finely chopped.
- Three cloves of garlic, crushed.
- 1 teaspoon of ginger powder.
- 1 teaspoon of cumin powder.
- 1 teaspoon of cinnamon powder.
- 1 teaspoon of turmeric powder.
- 1 teaspoon of paprika.
- Salt and pepper to taste.
- A handful of olives.
- A handful of preserved lemons, cut into wedges.
- Fresh chopped cilantro.
Instructions:
- Heat olive oil in a large Tajine pot or a heavy pan over medium heat.
- Add chopped onions and minced garlic. Cook them until they are clear.
- Place the chicken pieces in the pot and brown them on all sides.
- Sprinkle ginger, cumin, cinnamon, turmeric, and paprika over the chicken. Add salt and pepper, then stir to coat the chicken well.
- Pour in enough water to cover the chicken pieces halfway in the pot.
- Cover the Tajine pot and let the chicken cook on low heat for about an hour, or until it’s tender.
- Add green olives and preserved lemon wedges in the last 15 minutes of cooking.
- You can adjust the seasoning and top with fresh cilantro before serving.
- Serve your delicious Moroccan Chicken Tajine hot with couscous, rice or crusty bread.

Moroccan Lamb Tajine recipe.
Ingredients:
- 1 ½ pounds of lamb shoulder, cut into chunks
- 1 onion, chopped finely
- 3 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1 teaspoon of ground turmeric
- 1 teaspoon of ground cinnamon
- Salt and pepper to taste
- 1 cup of beef or vegetable broth
- ½ cup of dried prunes
- ½ cup of dried apricots
- ¼ cup of blanched, toasted almonds
Instructions:
- In a large Tajine pot, heat some olive oil over medium heat. Add chopped onions and minced garlic. Cook them until they feel soft.
- Next, put the pieces of lamb shoulder in the pot. Brown them on all sides.
- Season the lamb with ground ginger, turmeric, cinnamon, salt, and pepper. Mix well so the meat is covered with the spices.
- Add a bit of hot water and cover the pot with a lid. Let it cook on low heat for 1.5 to 2 hours until the lamb is tender.
- In another pan, add prunes, apricots, one spoonful of cinnamon, two spoons of honey, and half a glass of hot water. Stir until the water is gone, making the dish sweet.
- When the lamb is tender, mix the dried prunes and apricots into the Tajine, spreading them around the meat.
- Before you serve, sprinkle toasted almonds on top of the lamb Tajine.

Moroccan Fish Tajine.
Ingredients:
- Fresh fish fillets (Salmon or Tuna) or whole medium fish (Seabream or Hamour)
- Diced ripe tomatoes
- Sliced red and green capsicums
- Chopped onions
- Minced garlic cloves
- Chopped fresh coriander and parsley
- Olive oil
- Lemon juice
- Spices: cumin, paprika, turmeric, and saffron
- Salt and pepper to taste
Instructions:
- First, make the chermoula sauce. In a food processor, blend garlic, coriander, parsley, cumin, paprika, turmeric, saffron, lemon juice, olive oil, salt, and pepper until it is a smooth paste.
- Next, soak the fish fillets in the chermoula sauce for 30 minutes. This makes the flavours stronger.
- Then, heat some olive oil in a Tajine pot over medium heat. Add the chopped onions and cook them until they are soft and clear.
- After that, place the sliced capsicums and diced tomatoes on top of the fish. Pour the remaining chermoula sauce over everything.
- Cover the pot and let the Fish Tajin simmer gently for 25 to 30 minutes, or until the fish is cooked.
- Finally, add fresh parsley and serve it hot with crusty bread.
